 On a northbound trip to Tuguegarao City, the unassuming town of Cabagan in Isabela is worth a stop for one reason: the scrumptious namesake noodle dish at Josie Panciteria. Conveniently located along the highway, Josie Panciteria arguably makes the best in town. Traveling from Ilagan City, I just had to drop to enjoy their famous bowl of pancit cabagan for dinner, before hailing a passing bus bound for Tuguegarao City.

Introduced by Chinese immigrants in the early 1900s, pancit cabagan is a soupy miki (egg noodle) dish with lechon carahay (crispy deep-fried pork), igado (pork liver), quail eggs and mixed vegetables. Every spoonful of the dish is an inviting play of flavor and texture, like the saucy noodles and tender quail eggs in contrast with the bitter pork liver and crunchy pork toppings.
